Trial 4: Greek Tiropita


Approximately 35 freshly gathered worms of all sizes (mostly small) were purged and chopped and cleaned as in Trial 1-3.

A dough of flour (2 C), hot water (8 oz.), and salt (1/2 t) was made, refrigerated for an hour, and rolled out. Worm pieces (3 oz.) were sautéed in sesame oil (1/2 t.) for a minute, along with 1 small chopped onion, and some chopped green onion. A small amount of black pepper and hot chili pepper were added. A piece of lettuce was placed on the rolled bread dough, then the sautéed mix placed on top of the lettuce, and the dough circle folded over in half like an omelet. This was then fried on both sides in a pan with sesame oil (1 t.) until browned. Slices of this sandwich can be eaten, or it can be eaten as a whole while held in the hand.

Taste Tester 1 (Nancy) encountered a lot of sand, and found the taste in the worms like dirt could not be disguised by the other flavors. The frank appearance of small worms was psychologically distressing.

Taste Tester 2 (Ichi) encountered only a little sand, and felt this recipe was the best of those tried with worms.

Taste Tester 3 (Ron) also found this the best of all recipe trials thus far, the taste palatable. However, when he opened it up and looked at what he was eating, the shape of the worms was unmistakable and this was unacceptable. If he kept his eyes closed, this was not a problem. He also encountered sand, and found this unacceptable.
